A MASTER MAKER & BLENDER J.Arthur Rackham’s reputation is as a Master Maker & Blender of premium spirits. Born above his Daddy’s liquor store in the famous Portobello Road, West London, his life spirit journey started in ’68 when he was an apprentice with the Camus family in Cognac, and worked alongside the craft and experienced mentors in the distillery and rackhouses. This started a 40 year career of blending and an international spirit merchant business. A life journey and personal relationships with some of the 'greats' in distillation and cask maturation, becoming the 'go to' man for major buyers of Cognac, Armagnac and Calvados and in the last 10 years complex botanical recipes of gin. Daddy Rack (a name J.Arthur Rackham’s eldest daughter Grace gave to him). His lifelong ambition has now been realised with a new collaboration with an experienced and exciting team of distillers and cellarmasters creating an original Tennessee Straight Small Batch Whiskey recipe, true to tradition. Daddy Rack Tennessee Straight Small Batch Whiskey starts with the selection of the ingredients, all corn is sourced from local farmers within 50 miles of the distillery, high grade quality. The corn (80%), rye (10%) and malted barley (10%) are all then milled. After the mill follows a 72-hour Sour Mash, the ‘mash’ refers to the mixture of grain, water and yeast that is fermented to produce the alcohol. First distillation is in a copper column still, followed by a second pot 'doubler' still distillation, with a final abv around 67.5%. They take the same care with their filtration process, starting with the Lincoln Country Process which slowly filters the whiskey through a dense layer of sugar maple charcoal. By doing so, they are soothing and smoothing the spirit before it begins its journey to maturity in brand new American Oak barrels. Once the harsh congeners and flavours are removed the liquid is filled into 53 gallon American White Oak barrels, with a light Char No.3. Daddy Rack barrels are selected from specific locations in the Rackhouses. They look for barrels that have acquired a natural rich golden colour, vanilla tones from the Oak, and highlight the elegant flavour of good congeners that are flourishing, ultimately growing an individual whiskey of great character and maturity. 20 barrels are selected for a Master Batch Blend, but before batch blending, the whiskey has a light second Maple charcoal filtration to add a final smoothness. The 20 selected barrels are then batch blended using an original recipe (no colouring, caramel or any other nasties added!). Every bottle is Batch Coded with a signature from Daddy Rack - J.Arthur Rackham, Master Maker. Tennessee Whiskey conforms to all the rules of Bourbon, including the requirements to be made from at least 51% corn. Unlike Bourbon, which can be made in any State, Tennessee Whiskey can only be made in Tennessee following strict production and quality standards.
