Colonsay Gin is the creation of Wild Thyme Spirits, founded by Finlay and Eilleen Geekie in 2016 when they left their respective jobs as an architect and an HR professional in Oxfordshire to set up a spirits business on the island of Colonsay in the Scottish Hebrides. The couple spent 12 months planning and developing the business, and then 5 months honing the recipe for their gin. Colonsay Gin is produced in small batches of 160 bottles in a 100L copper still in the London Dry style with traditional botanicals including calamus root, liqourice root and orange peel. The bottle shows a depiction of Alva, a mythical maiden who reached Colonsay when her Viking boat crashed on the rocks. The legends say that her spirit still resides in the buildings that Wild Thyme Spirits are based in.

On the nose and to taste, piney juniper is at the forefront, while the various roots bring earthy, warm and subtly sweet notes. The calamus root makes a distinct cameo with its ginger-like heat that complements a touch of spice from the coriander seeds, and orange peel adds balance to other more savoury botanicals.

A good choice for cocktails and mixed drinks. Garnish with orange peel.
